Hi and welcome to the forum.
D3100 is one of the newer bodies which is not used so much. So at the moment, I suppose you have to try to find them on yourself. When H is 40mm, lens flange to tripod mount, NN3 LRS = Lower rails Setting is 56. URS = Upper Rail Setting of 10.5 may be around 83 ( D90 ).

Stitching errors aren't necessarily due to a poor setup of the panohead; more often it's a shortcoming of the stitching. You may need to manually assign additional control points in the neighborhood of the places where stitching errors occur. If using PTGui, you should also select Advanced mode, and on the Optimizer tab select "Heavy + lens shift" from the "Minimize lens distortion" options list. Then click the Run Optimizer button.

It may be that your panohead setup isn't up to scratch. If you care to upload a set of (jpeg) images to your personal web space or to a free service such as http://sharesend.com/, maybe we can identify cause of the trouble. (Preferably zip the files together, e.g. with 7-Zip).

I have just set up a D3100 with my Nikon 10.5 mm fisheye on my NN3.
I use the gold ring as my reference for the point of rotation and found that the settings are different from the Nikon D60, which the D3100 replaces.
I take 8 shots around @ 45° intervals (although I believe that 6 @ 60° intervals is often recommended) and found that the Top Rail is set @ 79mm and the edge of the upright under the camera is @ 50.5mm.
