i have a nikon d5000 and 18-200mm 3.5-5.6 lens
will this panoramic head hold the whole thing?

yes, some customers use it with D40 on NN3.
you get more stability with a NN5L though.

The Nikon D40 weighs 522g, however the D5000 which is the camera being used weighs about 610g inc battery. So will the NN3 support 1.175 Kg?

Well, the specs of the NN3 are:

Maximum weight load: 7lbs (3.2kgs)
Ideal working weight load: 3lbs (1.3kgs)
note: using heavier loads greater than 3lbs (1.3kgs) may cause sagging on upper rotator.

So.... Yes you can use the D5000 with the 18-200 f3.5/5.6 in terms of weight. However, you are now "pushing the envelope" of the NN3. By that I mean you are going to be operating the unit at about it's limit as far as weight on the upper arm goes. As Nick said, you will get more stability with a NN5L or NN5.
