Your all around panorama covers 360 degrees H and 180 V. The horizontal angle of view of your camera (assuming an APS-C sensor) will be approximately 87 degrees in portrait orientation. The minimum number of shots around is therefore 5. 6 is more commonly used, as that gives 30% overlap. The vertical angle of view of the camera will be 140 degrees, so there wiill be shots needed for the zenith and nadir , giving a total of 8. The horizontal row can be taken with the camera tilted down by 10 degrees to reduce the size of the nadir hole so that it can be more easily filled by cloning or with a hand held shot. You can also consider tilting the zenith down so that there's a better chance of finding matching features on one side of the image to align the zenith with the horizontal shots; use a pitch of 60 degrees instead of 90.

OH !!! ...... I understand now !
10.5mm Fish-Eye at Landscape is 180 degrees in horizontal angle ......... but I don't know at portrait is 87 degrees before !

No. In landscape orientation, HFOV=140. The diagonal FOV is 180.
