15mm fisheye will require more shots and results in higher resolution of the pano.
8mm fisheye will require less shots and results in lower resolution of the pano. But the resolution is good enough for internet display.

Canon EF 15mm Fisheye
8 images every 45? at -30? pitch, 8 images every 45? at +30? pitch, Zenith and nadir shots

Sigma 8mm Fisheye
5 images every 72? at 0? pitch, Zenith and nadir shots.
Or 4 images every 90? at 0? pitch, Zenith and nadir shots.

pitch is the value of the upper rotator.

To add to Nick's information, the 15mm would produce an equirectangular panorama image of about 15000x7500 pixels. The 8mm would produce 7200x3600. By tiliting the 8mm up a little to close the zenith hole, you can manage with a minimum of 4 around + nadir. For good quality fullscreen display, you need to end up with around 6000x3000 pixels.
